This flour is the result of a grinding method very similar to that used in distilling. First the components in the grain are separated to discard the less precious parts but to conserve the heart of the wheat, trapping not just the starch and precious proteins in the aleuron, but also the best fibres and the vital germs. The germs not only give a wonderful perfumed fragrance to the flour but also make it ideal for bakery products; germs are a rich source of vitamins and ideal to the bind water for a firmer, smoother and easy to handle dough.
